Lasagne For New Year’s In Sicily

While sporting red underwear, enjoying lasagne for New Year’s is traditional in some parts of Sicily (NB there are many, many traditions according to your “church bell” zone, aka campanilismo.). Importantly, however, it isn’t the lasagne that you might think. This Sicilian-style lasagne is more like a broad tagliatelle cut how you like it… And that’s part of the fun! Using excellent semolino flour and eggs, delight in rolling out your dough and cutting it into wide, long, mismatched pasta. Once cooked, smother it with fresh tomato ragù and high quality ricotta… And ecco ci, you have an extraordinary dish!

You want to have a meal that is anything but common today and tomorrow. Eat lentils too, at midnight, for prosperity. And get rid of old stuff that you don’t want to take into the new year. Wishing you a healthful, joyful, and prosperous 2022 full of safe travel adventures!
