Sicily’s Inspired Pistachio Pesto

Etna erupted last night! (NB This is an old photo.) Here she is from Bronte on the western slope with glorious pistachio trees in the foreground. Pistachios love the mineral and saline rich volcanic soil of Mamma Etna. It makes them taste so good! That’s why Sicilians invented pistachio pesto to go on pasta!

After the class we relaxed a bit with a glass of wine, then cooked the cavatelli, reserving half of it to freeze for another time. It was delicious! Our flavorful EVOO really mellowed the taste of the pistachios and a bit of the cooking water turned the whole dish creamy, with a final dusting of cheese and additional sprinkle of oil. We had the orange salad to follow. We had no Sicilian white wine, but enjoyed this with a Tuscan vermentino. Mille grazie!

      Yes, the addition of the pasta water with some grated cheese and mixing it with the warm, fresh pasta is perfection! I did this also after the broadcast, and it made it all come together beautifully. Thank you for joining me for this experience!
