Cassatelle (pictured) are sweet calzones stuffed with a mixture of fresh sheep’s milk ricotta, confectioners’ sugar, and chocolate chips. They are fried, and upon being served, are dusted with confectioners’ sugar. When eaten warm from the fryer, they melt in your mouth.
