Caponata is to Sicilians as salsa is to Mexicans: you’ll find it on almost every table. It is a cornerstone of Sicilian cuisine, and its agrodolce flavor is a reflection of life in Sicily – – sour and sweet at once. Caponata is made with a base of different ingredients, eggplant being the most traditional. It’s served as an appetizer with crusty bread, a side dish, or a trimming on grilled tuna, for example. During our interactive online experience presented by tour operator Experience Sicily, Annalisa Pompeo of GoSicily Sicilian Cooking Experience will be live from her kitchen in Sicily, from where she’ll walk us through the different steps to create caponata and then the method of preserving it so we can enjoy our bounty for months to come.
