Learn Three Ways to Make Artichokes
–Sicilian Style
Artichokes grow easily and plentifully in Sicily. You’ll often see wild artichokes growing on the side of the road in the countryside. They are a flower, and when they bloom, they showcase stunning violet florets. Every year in the town of Cerda in Palermo province, they celebrate the spring harvest with a grand festival on April 25. There, you’ll find artichokes made dozens of ways and tens of products inspired by the thistle. Then in the fall, a different varietal hits the markets. Today, in time for Thanksgiving in the United States, we’ll make artichokes three ways.
