In Sicily between Christmas and the end of April, the landscape is in bloom with fragrant, juicy citrus fruits such as this one. No, this is not a big, crazy looking lemon; it’s a citron. Still a citrus fruit, it has a character all its own. It is cultivated for its thick, white, fragrant inner rind that makes an out-of-this-world marmalade.

I hadn’t seen one until a few years ago. They are so ugly, but so good! Just don’t eat the inside raw (way too sour and bitter!) … Only the white part.
Didn’t realize they couldn’t be eaten raw! Well, that would make good marmalade!!! 🙂
